Seasonal Delights: Buttery Strawberry Shortcakes to Savor at Home

As the days grow longer and the scent of fresh blooms fills the air, it’s the perfect time to indulge in seasonal treats that celebrate the bounty of spring. One such classic is the strawberry shortcake—a delightful combination of tender biscuits, sweet strawberries, and airy whipped cream. Ingredients:

 

* 3 cups all-purpose flour

* ½ cup granulated sugar (vanilla sugar recommended)

* 1 tablespoon baking powder

* ½ teaspoon fine sea salt

* ¾ cup unsalted butter, cubed

* Zest of 1 lemon (juice reserved)

* 1¾ cups heavy cream

* 1 cup strawberry jam

* 1 pound ripe strawberries, hulled and halved

Preparation:

 

  1. Prepare the Biscuit Dough:

 

   * In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

   * Add the cubed butter and lemon zest, using your fingertips to blend until the mixture resembles coarse crumbs.

   * Gradually incorporate the heavy cream, mixing gently until a soft dough forms.

   * Roll the dough to a 1-inch thickness on a floured surface.

   * Using a 3-inch round cutter, cut out biscuits, being careful not to twist the cutter to ensure optimal rise.

  1. Marinate the Strawberries:

 

   * In a bowl, combine the halved strawberries with the reserved lemon juice and a tablespoon of sugar.

   * Let them sit for up to an hour to release their natural juices, enhancing their sweetness.([Simply Recipes][4])

 

  1. Bake the Biscuits:

 

   * Preheat the oven to 400°F (200°C).

   * Bake the chilled biscuits for 15-20 minutes, or until golden brown.

   * Allow them to cool slightly before assembling.

 

  1. Assemble the Shortcakes:

 

   * Slice the biscuits horizontally.

   * Spread a layer of strawberry jam on the bottom half, followed by a generous spoonful of marinated strawberries and a dollop of whipped cream.
